When I was little, I didn't realize that pimento cheese was something that people made--let alone ate! It looked alien and gross to me wrapped in plastic inside gas station sandwiches. Last year my friend Shuford and his mom made it and taught me how. It's delicious! I made a bunch for 4th of July and at least one person at the party was as excited about it as I was.
That pimento cheese stuffed celery looks good. Do you have a recipe, or at least a list of ingredients? I'm looking for make-ahead things to serve for Susan's graduation party, which we'll probably have around Labor Day when she finishes school.

ReplyDelete1/4 lb jack cheese (grated finely)
1/2 lb sharp cheddar cheese (grated coarsely because I got tired of the small grater)
1/4 cup mayonnaise
~2tbs grated onion plus the juice
lots of black pepper
1 largeish jar (about 4Tbs) pimentos
The recipe also called for some cream cheese but I didn't have any and didn't miss it. I served it on celery and made sandwiches with Toasted Wheat Thins, which are my family's favorite cracker but make sure you don't get the "lower sodium" kind because they taste awful!
